Chicken Coconut Curry with Fresh Coriander

I love a good old chicken curry, and this is a brilliant easy recipe you can prepare ahead of time and allow all the magic to happen in the slow cooker. Serve up with your choice of root vegetables or simply with some cabbage or leeks and you have a fresh, vibrant dinner that will leave you feeling fantastic without all the sweat and stress. Be sure to make plenty so you have enough for lunch the next day.


  • 500grams chicken breasts, cubed
  • 500grams chicken thighs, cubed
  • 3 stalks celery, diced
  • 1 onion, diced
  • 1 can coconut milk
  • 3 – 4 tablespoons curry powder
  • cayenne powder to taste
  • 2 tablespoons fresh grated ginger
  • Fresh coriander to garnish
  • salt and pepper to taste
  • optional extras add leeks, sweet potato and/or carrots to make an easy, all-in-one meal.

Cooking Instructions

  1. Mix together coconut milk with spices, onion and celery. Add chicken and vegetables to slow cooker and pour curry sauce on top.
  2. Cook on low for 4 – 5 hours.
