Kale Pesto




This dressing is so good. I served it up by drizzling over some hot chicken and used the extra for salad dressing the next day. You can make it as thick or as runny as you wish by adjusting the liquid amounts. Add other herbs into it like mint and parsley for even more flavour!


  • 5-6 leaves of kale
  • 1 cup cashews
  • 1/2 cup lemon juice
  • 1/2 cup olive oil
  • 5-6 fresh basil leaves
  • water
  • Salt and pepper to season


  1. De-stalk the kale leaves, and blanch quickly by pouring boiling water over top of them, then drain.
  2. Place kale, cashews, lemon, oil and basil leaves into the blender and blitz up until smooth. If it is to thick drizzle a little water in to you get the desired consistency you are aft
